Once a week a client would treat herself to a lovely dinner. This particular week she requested something that would showcase the vegetables available; this dinner consists of; butter basted chicken, roasted beets, mashed sweet potatoes and sauteed kale.

I love Seinfeld; so it only stands to reason that I'd make a 'Big Salad.' Kale, Spinach, Beets, Tomatoes, Red Onions, Cucumbers, lovingly dressed with an avocado based dressing.
